Notes on orange drink recipe BOM:
- The percentage of fruit in the orange drink should not be less than 10% (Codex) or as per your country's legislation .
- It is preferred to use treated water (TDS < 500).
- Ascorbic Acid is added as an antioxidant.
- Citric Acid is added as acidity regulator.
- The flavor dose is based on flavor strength and your organoleptic evaluation and supplier dosage recommendation.
- Orange juice color ranges from pale yellow to orange and that based on your company internal specification and according to marketing team campaign, you can add annatto to get perfect yellow color or beta carotene for orange color.
