Notes on Recipe of Guava Juice BOM SAP:
- The percentage of fruit in the guava drink should not be less than 10% (Codex) or as per your country's legislation .
- It is preferred to use treated water (TDS < 500).
- Ascorbic Acid is added as an antioxidant.
- Citric Acid is added as acidity regulator.
- The flavor dose is based on flavor strength and your organoleptic evaluation and supplier dosage recommendation.
- Titanium dioxide is used to make guava juice whiter, but many countries considered it unsafe as a food additive so please check your country's regulations before using it.
